baked brekkie apple crumble

Serves 4




6 granny smith apples, peeled, cored, and sliced thinly

2 tbsp brown sugar

Knob of butter 

Juice of ½ lemon



1 1/4 cups rolled oats

1 cup spelt flour 

1/3 cup brown sugar 

1 tsp ground cinnamon

100g butter, softened


Pre heat oven to 180C. Line the base of a pie dish with baking paper.


Add all of the Base ingredients to the pie dish. Bake covered with foil for 20 minutes. Remove from oven.


Make the Topping - place flour and butter in a bowl and rub together with fingertips.  Add remaining ingredients to the bowl and mix until combined. Pour evenly over cooked apples. 


Bake for a further 25 minutes or until golden and crunchy.


Serve with yoghurt or cream.
