cauliflower dahl
Serves 4
ingredients
1 brown onion, chopped
2 garlic cloves, chopped
2 tsp cumin
2 tsp coriander
1 tsp garam masala
1 tsp smoked paprika
1 cup brown lentils
½ cauliflower, chopped
½ small Japla pumpkin, peeled, chopped 3cm pieces
½ bunch coriander, chopped
1 lemon, juice and zest
method
Heat 1 tbsp oil in non-stick saucepan over medium heat and add onion. Cook for 3-5 minutes or until softened.
Add garlic and spices. Cook for further minute.
Add lentils, 4 cups water and vegetables. Bring to boil, reduce heat to simmer. Cook for 30 minutes. Add fresh herbs.
Serve with lemon juice and zest.
